Apple Cake

1-1/4 cups flour
1-1/2 tsp. baking powder
1/2 tsp salt
1/4 cup sugar

1/4 cup butter, cold
1 egg
1/4 cup milk
1 tsp vanilla

4-8 granny smith apples, depending on size
1/4 cup butter, melted
1/4 cup sugar
1-1/2 tsp cinnamon

Preheat over to 400 degrees. Lightly grease and flour pan.

Combine first 4 ingredients (flour, baking powder, salt, sugar.) Cut in butter. Mix together egg, milk and vanilla. Add to dry ingredients stirring with a fork until ingredients are just moistened. Spread evenly (as possible) in 13x9" pan.

Peel and slice apples very thin. Arrange densely in batter, narrow edge down. Brush apples with melted butter. Mix remaining sugar with cinnamon and sprinkle over top. Cover loosely with foil and bake at 400 for 25 minutes. Remove foil and bake an additional 10 minutes. Adjust baking time for other pan sizes.
