This is the easy version of Chili, perfect for college and apartment life. If you're interested in a bit fancier chili, look up "Chili con Carne" on this site. 1 lb ground beef
1 medium onion
½ green papper, chopped, optional
2 cloves garlic, optional
1 16-oz can chopped tomatoes with green chilies
8 oz can tomato sauce
1 16-oz can kidney beans
2 tsp chili powder
¼ tsp pepper
salt to taste
black olives, sliced, optional
cheddar cheese, shredded
Chop onion, pepper (if used) and garlic. Brown ground beef, onion, peppers and garlic in
large pot. Drain grease or blot with paper towels. Open and drain kidney beans. Add to meat mixture. Open tomatoes and add to mixture, including liquid. Stir in chili powder and pepper. Reduce heat and let simmer 15 minutes or so. Serve in bowls. Sprinkle with black olives and cheddar cheese.
Serve over rice, baked potato or with cornbread. (Find Jiffy cornbread mix in the baking aisle –
it’s quick, easy and cheap!)
