Quesadillas

This recipe is for basic quesadillas. Feel free to add seasoned ground beef or chicken, black olives, diced tomatoes or jalapeño peppers for a tasty alternative! Or load them up and make them a meal!

6 (six) 8” flour tortillas
1½ cup cheddar and/or jack cheese shredded
3-4 green onions, sliced or chopped
chili powder
pepper
butter or margarine
foil
salsa

Heat large skillet to medium temperature. Tear off a square piece of aluminum foil. With stick of butter or margarine trace a tortilla-sized circle on foil. Place one tortilla on butter-circle on foil. Sprinkle with ½ cup shredded cheese(es) and green onions (and any other ingredients you’re using.) Sprinkle with chili powder and pepper to taste. Place another tortilla on top. Securely fold edges of foil over tortilla around entire perimeter. Place foil packet into hot skillet foil-side down. Cook 3-5 minutes then flip packet with spatula and cook exposed-tortilla side another 3-5 minutes. Remove from skillet to a flat surface. Unwrap foil edges and flip onto a large plate. Carefully remove, and dispose of, foil.

Repeat process with remaining ingredients. Cut quesadilla into wedges. Serve with salsa
