Loaded Nachos

This can also be made into a meal for the hungry college student!

Students, make sure you have on hand: chili powder, paprika, salt & pepper, cheddar cheese

Shopping list: tortilla chips, ground beef, jalapeño peppers (jar - in the international aisle), tomato(es), green onions, black olives, jack cheese. (optional)

tortilla chips, approx ½ bag
½ lb ground beef
1 tsp chili powder
½ tsp paprika, optional
salt and pepper, to taste
1 tsp jalapeño (jar) peppers, minced, optional
1 large or 2 small, tomatoes, chopped
3-4 green onions, coarsely chopped OR
1 TBSP onion, chopped fine
black olives, drained and sliced, optional
1 cup or more, cheddar and/or jack cheese, shredded

Preheat oven to 350º with rack in center. Brown ground beef in skillet. Drain. Sprinkle with 1 tsp chili powder, ½ tsp paprika, salt and pepper. Adjust seasonings to taste. Set aside. On cookie sheet or pizza pan spread tortilla chips. Overlapping is fine, just make sure entire surface of pan is well covered. Distribute ground beef, jalapeño peppers, tomato, onion and black olives (or whatever combination you are using) over chips as evenly as possible. Shred cheeses over loaded chips. Bake in 350º oven for 10-15 minutes or until cheese is melted and bubbly.

Note: All quantities are approximate! This recipe should be adjusted to your personal taste!
