No-boil Lasagna

May be assembled ahead and refrigerated. If so remove from fridge and let warm up a bit before baking.

1 lb ground beef
1 qt italian sauce (Ragu, etc)
1 1/2 cups water (less if using homemade sauce)
2 eggs, beaten
1/4 cup chopped parsley
1/4 tsp pepper
2 cups ricotta cheese
3 cups mozzarella cheese, shredded (~8 oz)
1/2 cup parmesan cheese, grated
8 oz. lasagna noodles

Preheat oven to 350 degrees. Brown beef in large saucepan. Drain well. Stir in sauce and water, simmer for 10 minutes. In medium bowl combine eggs, parsley, pepper, ricotta, mozzarella and parmesan, set aside. Pour 1 cup sauce in 9x13" pan. Rinse 3 lasagna noodles under hot water and place on top of sauce in pan. Cover with 1 1/2 cups of sauce then spread half of cheese mixture on top. Repeat, ending with noodles and just sauce on top.

Cover with foil and bake for 1 hour. Uncover and bake 10 more minutes. Sprinkle with parmesan cheese. Let stand, loosely covered, 10 minutes before serving.
