Easy Cornbread

A quick cornbread recipe for when the chili is already simmering on the stove!

1¼ cups flour
¾ cup corn meal
¼ cup sugar (or less, to taste)
2 tsp baking powder
½ tsp salt
1 cup milk
¼ cup vegetable oil
1 egg, beaten

Preheat oven to 400 degrees.

Grease 8" or 9" pan (preferrably glass.) Combine dry ingredients in a large bowl. Stir in milk, oil and egg, mixing until just moistened. Pour batter into greased pan and bake 20-25 minutes until light golden brown. A wooden toothpick inserted in center should come out clean. Serve warm.

Servings: 6-8
