Mixed Fruit Tart

Use Pate Sable crust, and Pastry Cream filling for this delicious tart.

1 recipe Pate Sable
1 recipe Pastry Cream
1/4 lb sweet cherries, stemmed, pitted and cut in half
6 ripe apricots, peeled pitted and sliced
1/2 cup blueberries
1/3 cup red currant or apple jelly, heated

Make and cool Pate Sable (pastry shell.) Make and chill Pastry Cream. Spread pastry cream in tart shell. Arrange fruit in concentric circles in tart shell. Brush fruit with melted jelly. Chill until custard is set.
