Pastry Cream

Use this filling with the crust Pate Sable to make a great fruit tart.

1 cup milk
1/4 cup sugar
2 TBSP flour
1 egg yolk
1/2 TBSP butter
1 tsp vanilla

Bring milk almost to a boil in microwave or small pan. Meanwhile whisk together sugar and flour in a metal mixing bowl. Slowly mix in milk, whisking until smooth. Place bowl over saucepan of boiling water (double-boiler.) Cook and stir for about 10 minutes until custard lightly coats back of a spoon.

Add egg yolk and whisk rapidly. Cook and stir 10 minutes longer, until custard thickens. Remove from heat and stir in butter and vanilla: chill.
