Pastry Cream

Use this filling with the crust Pate Sable to make a great fruit tart. 1 cup milk Bring milk almost to a boil in microwave or small pan. Meanwhile whisk together sugar and flour in a metal mixing bowl. Slowly mix in milk, whisking until smooth. Place bowl over saucepan of boiling water (double-boiler.) Cook and stir for about 10 minutes until custard lightly coats back of a spoon.
