Southwest Potato Skins

4 large baking potatoes
5 oz monterey jack cheese, shredded
3 TBSP seeded jalapeņo or green chile peppers
1/2 tsp chili powder
2 TBSP cup butter melted
green onions
sour cream

Preheat oven to 375°F. Bake potatoes. Cool slightly. Toss together cheese, peppers and chili powder. (Very spicy with jalapeņo peppers.) Cut each potato in half lengthwise. Scoop out pulp and discard, or save for other use. Brush potato "shells" with melted butter. Place on baking sheet. Spoon cheese mixture into potato skins. Bake until cheese melts and skins are crisp and golden, about 10 minutes. Serve with green onions and sour cream.
