Fettucine Alfredo

1 lb fettucine
4 qts boiling, salted water
1/2 stick butter or margarine
1 cup milk (or half and half)
1 TBSP flour
3 oz grated parmesan
3 oz bleu cheese crumbled
dash of nutmeg
fresh pepper
1 clove of garlic, cut in half

Boil water for pasta. Cook pasta according to package directions. Prepare sauce. Melt butter in medium saucepan. Mix in flour and cook for one minute, stirring constantly. Gradually add milk and stir until creamy. Add parmesan cheese. Stir over very low heat until parmesan has melted. Add a dash of nutmeg and pepper to taste.

Drain pasta well and turn into a large pasta bowl that has been rubbed with a cut clove of garlic. Pour sauce over pasta a toss well. Sprinkle with bleu cheese and serve immediately.
