Calabrese Olives

Marinade:
1/2 cup extra virgin olive oil
2 TBSP balsamic vinegar
2 TBSP minced garlic
2 thin, halved chili peppers
1 tsp fresh rosemary
1 tsp fresh basil, chopped
1 tsp coarse salt (optional)

1 cup small button mushrooms
2 cups black mission or kalamata olives
1 cup cherry or grape tomatoes

Make marinade in a large bowl. Set aside. Remove stems from button mushrooms and blanch in boiling water for 2 minutes. Drain. Add mushrooms, olives and tomatoes to marinade and toss well. Marinate at room temperature for 2-3 hours. Serve at room temperature as an antipasto.
