P.F. Chang's Shrimp Fried Rice

Sauce:
1/4 tsp dry mustard
1 tsp ginger, minced
1 tsp garlic, minced
1 tsp moasses
2 TBSP light soy sauce

Rice mixture:
cooking spray, + 1 TBSP oil
2 eggs
1-1/2 cups cooked shrimp, chopped
3/4 cup fresh bean sprouts
3/4 cup carrots, cut in julienne strips
2 cups cooked rice
2-3 green onions, sliced

Mix sauce. Set aside. Spray pan with cooking spray. Heat to medium high. Pour in egg and tilt around to fill bottom. Sprinkle with salt and pepper. When lightly browned flip over for one more minute. Remove and cut into small pieces.

Heat 1 Tbsp oil. Add shrimp and saute until pink throughout, stirring frequently. Add carrots and bean sprouts and stir fry for ~ 2 minutes. Add steamed rice. Stir and cook an additional 2 minutes. Drizzle sauce over everything and stir for another minute or 2. Turn off heat and stir in green onion and egg.
