Sweet Potato Rolls

This recipe calls for a breadmaker but can also be made the old fashioned way!

1 lg sweet potato, boiled, mashed and still hot
4 TBSP butter
1 pkg yeast
2/3 cup milk
1/4 cup sugar
2 tsp salt
2 eggs, divided
4-5 cups flour

Combine 1 cup sweet potato and butter in breadmaker. Let butter melt then add milk, sugar, salt, 1 egg, 3-1/2 cups flour and yeast. Select "Dough" cycle. Press "Start." During first kneading add 1/2 cup flour or more to achieve desired consistency.

When dough is ready divide into 2 parts. Divide each part into 12 pieces. Roll each piece into an 8" rope and tie a single knot. Place on greased baking sheets and let rise, covered, in a warm place.

Preheat oven to 375 degrees. Beat remaining egg with 1 Tbsp water and brush on rolls. Bake until golden brown, 15-20 minutes.
